9 inch pie crust - baked at 425 degrees for 5 minutes

6 slices bacon
1 medium onion, chopped
2 cups shredded swiss cheese
4 eggs
2 cups milk
1 tsp. salt
1/4 tsp. ground nutmeg
1/8th tsp. pepper

Directions:
Directions:
Cook bacon in small skillet until crisp; drain off all but 1 Tbsp. fat; crumble bacon and reserve. Saute onion in bacon fat until soft. Sprinkle cheese in layer in pastry shell; add bacon and onion. Beat eggs slightly; beat in milk, salt, nutmeg, and pepper. Pour into pie shell. Bake at 450 degrees for 15 minutes. Lower oven to 350 degrees and bake for additional 15 minutes or until center is almost set but still soft. Let stand 15 minutes.

Makes 6 servings.
