onion, chopped
2 tsp oil
2 cloves garlic
1 tsp minced ginger
green pepper

2 tbsp peanut butter or seed butter
2 tbsp shoyu
1 cup water (or more)
4 tbsp celery leaves, chopped

pound firm tofu, cubed
4 tbsp toasted cashew pieces


Directions:
Directions:
Saute onion in oil with the whole garlic. When the onion is tender, crush the garlic with a fork. Add the ginger and pepper and cook gently for one more minute.
Stir in the peanut butter and shoyu, then water and celery leaves. Stir until smooth; then simmer about 5 minutes.
Add the tofu and cashews and heat through. Serve over steamed vegetables.
