Pasta Fagioli Recipe

4 T. Olive Oil
1 medium onion (chopped)
2 celery with leaves (chopped)
a small bag of carrots (chopped)
4 cloves garlic (chopped)
1 can 28 oz tomato puree
salt to taste
tspn red pepper flakes (optional)
5 cans 15oz cannellini beans (drained)
1 large 32oz chicken broth
1lb Ditalini Pasta (don't have to use all)

Heat oil in large deep pot, add celery, carrot, cook 20 minutes. Add onion, cook 10 minutes, add garlic and cook 10 minutes. Stir in tomato puree and chicken broth, and cook about 30 minutes. Add all beans, salt to taste cook for about 2 hours, then add the cooked pasta.

Serve with grated cheese and Italian bread.
