1 lb. sausage
1 small onion, chopped fine
1 C mozzarella cheese
2 Tb parmesan
1 pie shell
4 eggs
½ tsp salt
¼ tsp pepper
¼ tsp nutmeg
2 C half & half

Directions:
Directions:
• Preheat oven to 450°.
• Cook sausage in skillet, breaking into small pieces as you cook.
• Remove sausage and leave 1 Tb oil in the skillet; cook onion.
• Cube mozzarella cheese.
• Place refrigerated store bought pie shell in pie plate.
• Combine sausage, cheeses, and onion and place in unbaked pie shell.
• In medium mixing bowl, combine eggs, salt, pepper, nutmeg, and cream.
• Pour on top of sausage mixture in pie shell.
• Cook at 450 for 15 minutes.
• Reduce heat to 350◦ and bake for 10-20 minutes until knife inserted comes out clean.

Serves 4-6.

Rick's mom, Lelah Sartain, introduced me to quiche. She was an excellent cook and was 1 semester away from graduating with her Home Economics degree. She broke her ankle and began working in the oil industry traveling so she never finished her degree. We were very close and I still think of her often. She passed away in 1985.
