80g fine oatmeal
250ml (1 cup) milk
270g golden syrup or 1/2 cup each corn syrup and honey
90g molasses
225g butter
200g brown sugar
280g flour
1 tsp soda
1 tsp powder
3 tsp ground ginger
3 tsp mixed spice (lebkuchengwurze)
2 eggs beaten

Directions:

1. Heat the oven to 350. Line a square cake pan, with parchment paper.
2. Pour milk over oatmeal and soak while you prepare other ingredients.
3. Weigh sryup and molasses into saucepan add butter and sugar. Melt over a gentle heat, stirring occasionally. Do not boil!
4. In a large bowl sift together dry ingredients.
5. Add oatmeal mixture, eggs and syrup mixture to the dry ingredients mix thoroughly with a whisk.
6. Pour into prepared baking pan and bake in center of oven for 1 hour 15 mins or until toothpick comes out clean. Cool in tin, store in airtight container.
