Skinless Chick Breasts, Egg, Flour, Olive Oil, Butter, Champagne, Chicken Stock, Salt and Pepper

Directions:
Directions:
1) Heat Olive Oil and Butter in sauté pan.
2) Crack Egg and whisk in bowl. Season the flour with salt and pepper and put in another bowl.
3) Dredge chicken pieces in egg, flour, egg, and flour.
4) Put chicken pieces in heated pan and season with salt and pepper.
5) Brown chicken pieces on both sides.
6) Turn down heat and add champagne (up to 1/2 bottle).
7) Cover and simmer for about 10 minutes / turn and cook about another 10 minutes or until done. Do not overcook.
8) If liquid boils away add chicken stock as needed. Do not let chicken cook dry.
9) Remove chicken and add more stock to make sauce. Reduce.
10) Finish off with butter and a drop of champagne.

Keith first made this for Mom and G-Mom more than 30 years ago. Drink the remaining champagne as you enjoy this dish. Serve with Bacon and Mushroom crepés.
