1lb. small or medium Barley, 2 (13 3/4 oz) Chicken Broth, 1 cup chopped Mushrooms, 3/4 cup Butter, 3/4 cup chopped Onions, 1/2 tsp. Salt

Directions:
Directions:
Preheat oven to 350ºF
Melt 1/4 cup of Butter in skillet
Add Onions, Mushrooms and Salt to skillet and cook gently
Once Onions are transparent, empty mixture into casserole or dutch oven
Melt remaining 1/2 cup of butter in original skillet.
Add barley and cook over medium heat until starting to brown.
Pour Barley into casserole.
Add 1 cup of Chicken Broth.
Cover and bake until liquid is nearly all absorbed, about 20 minutes.
Add second can of chicken broth.
Cover and bake until barley is tender, about 50 minutes, but check often.
