Use soft ice cream. Place a scoop of ice cream on one cookie. Place another cookie on top. Put in freezer to set. Eat.

Possibly the easiest dessert we have ever served. But we have brought these out at 'fancy' dinner parties, and people have gone crazy about them. It's sometimes even better if you serve a variety of cookies and ice creams and let people make their own!
