2 pounds kraut - soak in water, rinse and squeeze dry.
¼ cup diced carrots
¼ cup oil
1 pound sliced onion
4 sprigs parsley
¼ cup gin
1 bay leaf
1 cup dry white wine
6 peppercorns
2-3 cups chicken broth

Directions:

Place all ingredients in a large casserole. Cover and cook at 325º for 3-4 hours. Check occasionally and add wine or broth, if necessary.
