6 ounces diced Comte cheese (or any Swiss-type cheese)
4 Tbsp. butter
1/4 cup flour
1 cup plus 1 Tbsp. hot milk
Salt and pepper
Nutmeg
Cayenne (optional)
3 eggs, separated
Bread crumbs
Oil for fying

Directions:
Directions:
In a small saucepan, heat butter until it foams. Add the flour all at once and mix well. Cook for 2 minutes. Then add the hot milk all at once and beat well and cook for 2-3 minutes, stirring frequently. Season with salt, pepper, nutmeg, and cayenne. Adjust seasonings as needed. Remove from heat and stir in 3 egg yolks with whisk, and mix well, whisking constantly. Add cheese and return to heat. Bring to boil, beating constantly. Spread hot cheese mixture out evenly on a greased metal platter. Spread with a film of butter so a crust does not form.

When cool, cut out rounds with a small round cookie cutter dipped in egg whites which have been beaten until foamy. Dip rounds in egg whites and then in bread crumbs. Place them on a rack at room temperature until ready to deep fry. Fill a large saucepan with about 1 1/2 inches of oil and heat until it smokes and crackles with you drop a little water into it. Gently lower the croquettes into the hot oil, being careful not to overload the pan. Cook until golden brown. Do not turn over. Remove from pan and drain on paper towels. Serve immediately.

Makes 6-8 servings.
