"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Pour milk in sugar, shortening and salt. Cool to lukewarm. Soften yeast in warm water and mix well with beaten eggs. Add to milk and mix. Add about 4 cups of flour, stir. Add about 2 cups of flour, stir. After dough can be handled, knead. Add about 2 c. more flour, or so as you knead dough. Dough should be softer than bread dough. Place in a greased bowl and let raise until double in bulk, about 1 hours. Punch down. Let raise about 1 hour. Do not punch down again. Just cut off piece, press down and cut into squares. Fill with filling and bring opposite ends together to form kolacky. Put in greased muffin tins. Let raise for about 1 hour until double. Bake at 375 for 20-30 minutes. Spray with cooking spray as they are finished baking and sprinkle with sugar.
