"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Pour milk in sugar, shortening and salt. Cool to lukewarm. Soften yeast in warm water and mix well with beaten eggs. Add to milk and mix. Add about 4 cups of flour, stir. Add about 2 cups of flour, stir. After dough can be handled, knead. Add about 2 c. more flour, or so as you knead dough. Dough should be softer than bread dough. Place in a greased bowl and let raise until double in bulk, about 1½ hours. Punch down. Let raise about 1 hour. Do not punch down again. Just cut off piece, press down and cut into squares. Fill with filling and bring opposite ends together to form kolacky. Put in greased muffin tins. Let raise for about 1 hour until double. Bake at 375º for 20-30 minutes. Spray with cooking spray as they are finished baking and sprinkle with sugar.

*For filling you can use anything you like; Apple pie filling, raspberry filling, poppy seed filling, prune filling etc.
