1 unbaked pie crust (homemade or store-bought)
3/4 c. pinto beans (heated and lightly mashed)
1 c. sugar
2 eggs, beaten
3/4 c. (1 1/2 sticks) unsalted butter, melted
1/2 c. pecans, finely chopped
1 tsp.vanilla extract
1/4 tsp.salt

Directions:
Directions:
Preheat oven to 350 F.
In a large bowl, stir together beans, sugar, beaten eggs, melted butter, vanilla extract, and salt, then fold in chopped pecans.
Once mixture is fully combined, pour into pie shell.
Place pie in oven and bake for 45-50 minutes, or until center of pie is just set, but still slightly jiggly.
Remove from oven and let cool before serving.
