Ingredients: 1 lb. ground beef
1 egg
1 clove garlic - chopped fine
1 tsp. parsley
Salt and pepper
4 slices of bread (stale preferred) dip in water and strain bread dry
2-3 tbs. Romano or Parmesan cheese
1 cup bread crumbs
3 tbs. parmesan cheese

Directions:1. Mix all ingredients - except for bread crumbs and the 3 tbs. parmesan cheese
2. Shape into silver dollar size balls.
3. Mix bread crumbs and 3 tbs. parmesan cheese - set aside. |

Ingredients: 1 piece salt pork - fatty
2 garlic cloves - diced
1 lge. can tomatoes - strained
2 small cans tomato paste
1 lge. can water - tomato can
Salt and pepper
1 lge. diced onion
2 small cans of water - tomato paste cans
2 tbs. Romano or Parmesan cheese
1 pkg. pork neck bones

Directions: |
Directions:1. Cut salt pork in pieces of thick skin of salt pork.
2. Put in pan and dice rest of salt pork.
3. Put in pan and brown until all fat is out.
4. Throw away diced pieces only.
5. Salt and pepper pork neck bones and brown in the fat.
6. Take neck bones out of pan.
7. Roll meatballs in bread crumb and parmesan cheese mixture.
8. Brown meatballs in same pan.
9. Take out meatballs when browned.
10. Add onions, garlic, and cloves to same pan and saute.
11. Add tomatoes (strained) tomato paste, and water.
12. Stir well and add cheese.
13. Salt and pepper to taste.
14.Put in pork bones, skin pieces of salt pork, and meatballs.
15. Bring to a boil - cover with lid open slightly.
16. Simmer 3 - 5 hours or until thick.
17. Take out pork skin and pork bones.
Note: When preparing 2 lbs. or more of pasta - double the sauce recipe, except for the pork bones. |
