Sauce:
2 tablespoon granulated sugar
2 teaspoon cornstarch
˝ teaspoon ground ginger
Dash salt
˝ cup prepared orange juice
1 medium orange, juice squeezed
4 tablespoons unsalted butter

Fish:
2 tilapia fillets
salt & pepper
flour for dusting fish

For the sauce:
In a saucepan, mix sugar, cornstarch, ginger, and salt. Add juice; cook and stir until thick and bubbly. Boil one minute, stirring constantly. Squeeze fresh orange juice. Stir in butter.

For the fish:
Salt and pepper the fish and coat with flour. Heat oil in a pan and sauté the fish until cooked through. Serve with the sauce.

When we were in Spain at a beach restaurant near Sitges David ordered a fish dish that came with an orange sauce. It was so good. I told David that I could recreate it at home and this is what I came up with!
