1/4 cup Dijon mustard
2 tablespoons whole-grain mustard
2 tablespoons honey
2 garlic cloves, minced
2 tablespoons chopped fresh rosemary leaves
1-2 pork tenderloins
6-7 slices of bacon. (Enough to wrap the tenderloin)
Salt and pepper

1. Preheat the oven to 350º F. Line a baking sheet with aluminum foil and place a rack on top of the baking sheet.

2. In a small bowl, add the Dijon mustard, whole-grain mustard, honey, garlic, and rosemary and mix together until smooth. Lay the bacon side by side on the rack making sure to slightly overlap the first piece. Sprinkle the tenderloin with salt and pepper. Spread the mustard mixture evenly over the pork. Lay the covered pork on top of the bacon. Starting on 1 side, start wrapping the bacon around the pork. Continue wrapping bacon making sure to slightly overlap the first piece until the pork is fully covered in bacon. Roast in oven until the pork registers at least 160º and bacon is crispy approximately 45 minutes.

I use my convection oven to help get the bacon crisp. Everyone wants the ends because they are crispier so it’s a good idea to make sure it’s all crispy,
