Boneless Chicken Breasts with Skin (one per person), cubed White Bread, chopped Celery, chopped Onion, a stick of Butter, Sage, Thyme, Salt, Pepper, Olive Oil

Directions:
Directions:
Dressing: Melt the butter in a large pan. Take off the heat and add all of the other ingredients except the chicken. Mix well and let sit for 20 minutes to let the flavours combine.

Preheat the oven to 325ºF.

Wash the chicken breasts, dry them and lay them skin side down. Pound to flatten them slightly then place a compacted mound of dressing on each piece. Roll the chicken around the dressing, securing with string if needed.

Lightly grease a baking tray with olive oil and place the chicken breasts skin side up in the tray. Cook 1 to 1½ hours or until done. We use a meat thermometer to check.

Serve with white gravy.
