½ cup flour
½ cup milk
1 tablespoon sugar
4 tablespoons butter
Lemon, syrup, berry or apple reduction, confectioners' sugar or cinnamon sugar

Directions:
Directions:
Preheat oven to 425 degrees. In a blender mix eggs and then add milk and flour alternately.
Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth.

Place butter in a heavy 10-inch cast iron skillet (or pie pan) and place in the oven. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 10 minutes, until the pancake is puffed and golden. Lower oven temperature to 350 degrees and bake another 10-15 minutes longer. Remove pancake from oven, cut into wedges and serve at once topped with squeeze of lemon, berries or apples, syrup, confectioners' sugar or cinnamon sugar.

This isn't one of Mom's recipe but I included it for dad. We always make this for one of the breakfasts when I come visit.
