Ingredients: 3/4 cup yellow cornmeal 2 cups milk 1/2 cup vegetable oil 1/2 cup honey 1 Tbsp. salt 2 eggs beaten with 2 Tbsp. water 2 packages yeast dissolved in 1/2 cup warm water with a dash of sugar to activate 4-6 cups flour

Directions:In a large pot cook cornmeal with milk over medium heat stirring until mixture is thick. Remove from heat and add honey, oil and salt. Mix well. Let cool.
Beat eggs with water. Add to cornmeal mixture. Dissolve yeast in water with sugar. Once activated, add yeast to cornmeal mixture.
Add flour 1 cup at a time. After 4 cups of flour have been added and batter is thick turn out dough onto floured surface and knead in remaining flour until the dough is still soft but no longer sticky. Place dough in oiled bowl and let rise for about 1 to 1 1/2 hour or until doubled and fingers leave holes when pushed into dough.
Spray cookie sheets with non-stick cooking spray and dust with cornmeal. Roll dough into balls and place on baking sheets 2 inches apart (6 rolls per cookie sheet). Let rise 30 minutes to one hour more or until rolls have doubled in size.
Bake at 375º for 10-15 minutes (usually done in 12 minutes). |
