8 pounds green tomatoes (about 24 medium sized), cut into large chunks
4 medium green peppers, chopped - seeds removed
4 medium red bell peppers, chopped - seeds removed
2 large onions, chopped
2 cinnamon sticks
1/2 tsp. whole cloves
1/2 tsp crushed red pepper
4 cups cider vinegar
2 cups sugar
1/4 cup salt
1/4 cup mustard seed

You will need five 1 pint jars and lids.

With a food grinder, using coarse cutting disk, grind tomatoes, peppers and onion into large bowl. Place in colander and drain for one hour pressing out excess liquid occasionally.

Prepare jars and lid for processing.

Tie the cinnamon, cloves and red pepper in cheesecloth bag. In a 12 qt. sauce pot or kettle over high heat, heat spice bag, vinegar, sugar, salt and mustard seed to boiling, stirring occasionally. Reduce heat to medium, cover and cook for 20 minutes.

Add tomato mixture, heat to boiling, stirring frequently. Discard spice bag. Ladle hot mixture into hot jars to 1/8 inch of top of jar. Close jars. Process in boiling water bath for 10 minutes.

You can refrigerate any remaining relish to use within one month. cool and test for seal. Store in cool dry place to use within one year.
