cup bell pepper, finely chopped
cup onion, finely chopped
1 lb. ground beef
cup oats, quick or old-fashioned
cup barbecue sauce, divided in half
1 egg
1 teaspoon dried thyme leaves
1 teaspoon salt
teaspoon pepper

Directions:
Directions:
Preheat oven to 350. Place onion and bell pepper in a saucepan with small amount of oil and cook until mostly tender. Combine bell pepper, onion, ground meat, oats, egg, cup barbecue sauce, thyme, salt, and pepper in a mixing bowl; mix lightly but thoroughly. Shape meat mixture into a loaf pan. Bake 50 minutes. Spread remaining cup barbecue sauce over meatloaf. Bake an additional 10 minutes or until meat is no longer pink in center. Let stand 10 minutes or until meat is no longer pink in center. Let stand 10 minutes before slicing.
