Zucchini Chocolate Cake Recipe

2 c. flour
c. cocoa
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon, opt
c. vegetable oil or butter
2 c. granulated sugar
3 eggs
2 c. unpeeled zucchini, grated
2 tsp. orange rind, opt.
2 tsp. vanilla
c. milk
1 c. chopped nuts

Orange Glaze:
c. confectioners' sugar
1 TB concentrated orange juice

Cream Cheese Frosting:
1 (8 oz.) cream cheese
c. butter
4 c. confectioners' sugar
1 tsp. vanilla

Combine flour, cocoa, baking powder, baking soda, salt and cinnamon. Beat together oil and sugar; add eggs and beat well. Add zucchini, orange rind and vanilla. Alternately stir in dry ingredients and milk and nuts. Grease and flour your choice of pan. Bake in round spring form for 1 hour, or in 9 x 13 pan for 40 to 50 minutes (until toothpick comes out clean). Spread with your choice of Orange Glaze or Cream Cheese Frosting. This cake is very good!

Orange glaze:
Mix together and spread over warm cake.

Cream Cheese Frosting:
Cream together all ingredients and spread over cooled cake.
