1 lb. mascarpone
c. sugar
2 T. amaretto [ick], Cognac or liqueur of choice
1 c. heavy cream
24 savoiardi (imported ladyfingers) [domestic are fine, assuming they are easier to find]
1 c. brewed espresso, at room temperature [decaf is fine & quality doesn't matter too much; I've used instant]
c. chopped bittersweet chocolate

In a large bowl, whisk together the mascarpone, sugar & liqueur until smooth.

In a chilled bowl with chilled beaters, whip the cream until soft peaks form. Fold the cream into the mascarpone mixture.

Lightly dip half of the ladyfingers in the espresso & arrange them in a single layer in the bottom of an 8-inch square pan. Spread half the mascarpone mixture over the ladyfingers. Sprinkle with half the chocolate.

Dip the remaining ladyfingers in the espresso. Top with the remaining mascarpone mixture, spreading it smooth. Sprinkle with the remaining chocolate. Cover with plastic wrap. Refrigerate for several hours or overnight before serving.
