4 to 6 Cups of chopped, smoked, meat
Beef, pork, chicken, or all of them.
1 large sweet onion, diced
3 stalks chopped celery
4 cubed potatoes
1 to 2 Tbs. BBQ rub
2 Cups low sodium chicken stock
1 lb. frozen lima beans
1 lb. frozen corn
1 Cup favorite BBQ sauce
3 14 oz. cans of diced tomatoes
1 14 oz. can tomato sauce

Directions:
Directions:
Prepare the meat and set aside.
Chop the onion, celery, and potatoes.
Cover potatoes in cold water, bring to a boil, then remove from heat.
In a large heavy pot, saute onions and celery in 2 Tbs. bacon fat for 5 to 7 minutes until translucent.
Add the BBQ rub to taste.
Drain the potatoes and add to the pot.
Add the stock and the meat and bring to a simmer.
Add all other ingredients, bring to a boil, then reduce heat and simmer until beans are tender.
Continue to adjust seasoning until you are happy with the flavor.
