2 c. canned tart cherries (I use 2 cans which is about 2 1/2 c.)
1/2 c. cherry juice
1 c. sugar
3 tbsp. flour
1/4 tsp. salt
1/8 tsp. almond flavoring
1 tbsp. butter
red food coloring (optional)

Directions:
Directions:
In a saucepan, mix sugar, salt, and flour. Add juice, coloring and flavoring. Bring to a boil and cook until mixture thickens somewhat. Add cherries and butter and let cool. Pour into prepared pie shell, top with crust. (I always do as my mother did and brush the top with just a bit of milk and sprinkle with a little sugar.) . Bake at 425 for 10 minutes, turn oven down to 350 and bake for 45 minutes more or until browned and bubbly.
