1 envelope unflavored gelatin
1 c. sugar
1/2 tsp. salt
4 egg yolks
1/3 c. lemon juice (fresh if possible)
2/3 c. water
1 tsp. grated lemon peel
4 egg whites
1/2 c. whipping cream (whipped)
1 9 in. pastry or graham cracker pie shell

Directions:

Thoroughly mix gelatin, 1/2 c. sugar, and salt in saucepan. Beat together egg yolks, lemon juice, and water; stir into gelatin mixture. Cook and stir over medium heat just until mixture comes to boiling. Remove from heat; stir in lemon peel. Chill, stirring occasionally, until mixture is partially set.

Beat egg whites until soft peaks form. Gradually add 1/2 c. sugar, beating to stiff peaks. Whip cream and fold into gelatin mixture along with egg whites. Chill until firm.
