"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
1 ½ lb. top round steak, cut 1 inch thick

Teriyaki Marinade:
½ cup dry sherry
¾ cup soy sauce
3 Tbsp. bottled steak sauce
2 Tbsp. sugar
2 cloves garlic, crushed

8-inch bamboo skewer, soaked in water before using

Directions:
Directions:
Pierce steak deeply all over with a fork and place in a shallow non-metal dish.

To make marinade, combine sherry, soy sauce, steak sauce, sugar, and garlic in small bowl. Pour about 1/3 over steak. Cover (reserving remaining marinade for dipping). Refrigerate for several hours or overnight, turning steak once or twice.

Cut meat into long thin slices, about 1/8 inch thick and thread accordion style onto bamboo skewers; brush with marinade. Broil, 2-3 inches from heat for 1 minute; turn and broil for 1 minute longer. Serve with reserved marinade.

Makes 8-10 servings.
