1 piece of fresh ginger (2x1 inch) peeled
2 tsp. oil
2 c. orange juice
1 T. peeled, grated fresh ginger
1 T. Dijon mustard
¼ tsp. pepper
1 ¼ lbs. cod fillets

Directions:
Directions:
Cut ginger lengthwise into thin slices. Cut into thin strips. Heat oil in med. size nonstick skillet. Add ginger strips, saute until golden brown and crisp, about 3 minutes. Drain on paper towel.
Combine orange juice, grated ginger, mustard and pepper and bring to a boil. Add fish in single layer. Return to boil. Lower heat; cover and cook gently, 6 to 10 minutes until fish flakes when touched with fork. Remove fish with slotted spoon and keep warm.
Boil sauce over high heat until thickened about 8 minutes.
To serve, spoon sauce over fillets. Garnish with crisp ginger strips.
