3 tablespoons of olive oil
1 lb of chicken pieces (thighs and legs)
5 garlic cloves, crushed
1 tablespoon of salt
1 medium onion, chopped
1 green pepper, chopped
2 cups of rice
2 cups of water
1-6.5 oz. can of tomato paste
Bay leaves, crushed and whole (as desired)

Directions:
Directions:
In a large pot (deep) place olive oil and chicken pieces. Salt while turning chicken and cook till brown. Add garlic cloves, crushed, medium onion, and green pepper. Brown for an additional 5 minutes. Add tomato paste, water, and bay leaves. Bring to a boil. Cover and let simmer for 15 mins. Add rice. Crack lid on pot slightly. Reduce heat and cook for another 30 minutes. Add a can of peas and sliced green olives for additional flavors if desired. Rice will be of a drier consistency.
