½ stick butter or margarine
1 large onion, chopped
1 clove garlic, finely chopped
2 cups (1 lb) uncooked rice
½ tsp. saffron threads or ¼ tsp. saffron powder
7 cups chicken broth
Salt and pepper to taste
4 ripe tomatoes, chopped
1 cup finely chopped parsley or cilantro

Directions:
Directions:
In a large saucepan, heat butter and saute onion and garlic for 5 minutes. Stir in rice and saute until grains are transparent, and then add saffron and chicken broth. Cover and simmer until rice is tender and liquid is absorbed, about 20-25 minutes. Salt and pepper; serve with tomato and parsley/cilantro border.

Makes 8-10 servings.
