2 tbsp. olive oil
2 tbsp. oil
6 loin pork chops, lean 1 1/2 inch think
1 tsp. finely chopped garlic
1 tsp. oregano
1/4 tsp. thyme
1/2 bay leaf
1/2 c. dry red wine
1 - 16 oz. can tomatoes, cut up
1 tbsp. tomato paste
1 green pepper, cut in narrow strips
1 2 1/2 oz. jar sliced mushrooms, drained

Rice or noodles for serving.

Brown chops in olive oil for 2-3 minutes each side. Set aside. In the same skillet, cook garlic, oregano, thyme, and bay leaf for 30 seconds, stirring constantly. Add wine, boil down to 1/4 c. stirring constantly. Stir in tomatoes and paste, return chops and cover with sauce. Simmer 40 minutes.

In another skillet, sauce peppers and mushrooms in 2 tbsp. oil for 5 minutes until vegetables are tender.

Serve over rice or noodles.
