Pasta

1 lb box of Cavatappi pasta, or Macaroni pasta
1 15.25 oz can Del Monte Southwest Corn with pablano and roasted red peppers
1 7 oz can diced green chilis (Ortega)

Prepare the pasta according to package directions. Drain the pasta in a strainer in the sink. Pour the corn and chilis over the pasta to drain. Set aside.
 

SAUCE


Ingredients:

½ stick butter
5-6 tablespoons of flour
3 ¾ cups milk
1 cup whipping cream
5 cups shredded of a really good sharp cheddar cheese – don’t buy already shredded
1 cup shredded of a really good parmesan cheese – don’t buy already shredded
1 cup shredded fontina cheese – don’t buy already shredded
2 tablespoons dry mustard
½ teaspoon cayenne pepper
2 teaspoons black pepper
2 cups chopped smoked ham in good size chunks
Salt to taste

Melt butter in a large pot over medium heat until bubbly, but don’t brown. Slowly whisk in the flour a little at a time to make a roux. Let the roux cook for a couple minutes, mixing so it doesn’t burn. Slowly, add the milk/cream into the roux with the whisk, to keep it from lumping. Once the milk/cream has been added in, increase the heat a bit to a gentle boil, whisking the whole time to keep it from lumping. Keep cooking and whisking for a few minutes. You want it to cook, but not overcook or it will lump. Once the sauce has thickened and coats the back of a spoon, mix in the cayenne pepper, black pepper and dry mustard. Add the cheese in three batches, whisking each time until each addition is completely melted and incorporated into the sauce. Once all the cheese for the sauce is melted in and smooth, remove from heat. Add salt to taste.

Pour the strained pasta/corn/chilis to the cheese mixture and mix well. Add chopped ham and mix well. Pour into the buttered pan and spread evenly. Sprinkle the topping over the pasta. Bake in a high heat oven to brown the topping, or you can broil it if you keep a really close eye on it so it doesn’t burn.
 

TOPPING

1 ½ to 2 cups Italian Style Panko Bread Crumbs
1 cup shredded then chopped parmesan cheese
½ cup shredded fontina cheese

Chop the shredded parmesan and fontina and place in a bowl with the bread crumbs. Mix well and set aside.
 

ASSEMBLE

Butter a 13 x 9 dish. Pour pasta mixture into the buttered pan and spread evenly. Sprinkle the topping over the pasta. Bake in 350 degree oven to brown the topping, or you can broil it if you keep a really close eye on it so it doesn’t burn.
