2 tsp gelatin
2 tbsp water
1 tsp grated lemon rind
2/3 c. sugar
1/4 c. lemon juice
3 eggs, separated
1/4 tsp salt
3/4 c. whipped cream

Directions:
Directions:
Softened gel in water for 5 minutes. Combine get, 1/3 cup sugar, salt, lemon juice and rind in double boiler. Break egg yolks lightly and stir into lemon mixture. Cook until thick. Fold in whipped cream. Beat egg whit and remaining sugar until stiff. Fold into lemon mixture. Put mixture into pie pan with crust and refrigerate for several hours.
 

Graham Cracker Crust

1 1/2 c. graham cracker crumbs
2 tbsp sugar
4 tbsp butter

Combined ingredients and press into bottom and sides of pie pan.
