1 1/2 c. sifted all-purpose flour
1 c. sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
2/3 c. cooking oil
2 eggs
1 c. finely shredded carrot
1/2 c. crushed pineapple (with syrup)
1 tsp vanilla
1/2 c. walnuts

Preheat oven 350

Sift together all dry ingredients. Mix in all wet ingredients until moistedned. Beat 2 minutes on medium speed on electric mixer. Fold in walnuts.

Bake in greased and lightly floured 9x9x2 inch pan for 35 minutes or until done. Cool 10 minutes and then remove from pan. Cool completely and then frost.
 

Cream Cheese Frosting

3 oz package cream cheese, softened
1 tbsp butter, softened
1 tsp vanilla
2 c. confectioners'sugar

Directions:
Directions:
Beat cream cheese, butter and vanilla on low speed, until light. Gradually add in sugar, beating until fluffy. If needed, add milk till spreading consistency.
