Beef Enchilada w/ Homemade Sauce Recipe

Ingredients: Sauce: 2 tbsp olive oil 2 tbsp flour 4 tbsp chili powder 1/2 tsp garlic powder 1/2 tsp salt 1/4 tsp cumin 1/4 tsp oregano 2 cup chicken stock
Enchilada: 1 lb ground beef salt & pepper cilantro 1/2 white onion diced 1 (4 oz) can of diced green chilies 1/2 (15 oz) can of rinsed black beans 8 large flour tortillas 3 cups mexican blend shredded cheese

Directions:Sauce: Heat oil over medium heat and add in flour Add all other dry ingredients and mix Slowly add chicken stock and stir to make sure there are no clumps Bring to boil then simmer for 10-15 minutes until slightly thickened
Enchilada: Heat oven to 350 and grease 9x13 pan Brown ground beef and remove to separate dish (salt and pepper to taste) Drain most of the grease but leave a few tablesspoons in pan Add diced onion and cook until transparent Add beans and green chilies to warm Add cooked onion,beans, and chilis to beef Add 1/4 cup enchilada sauce Add cilantro to taste
Assembly: Coat bottom of dish with sauce Add small amount of sauce to tortilla Add 1/8th of beef mixture Add 1/4 cup cheese Roll up and place in dish seam side down Repeat Pour remaining sauce over top Sprinkle remaining cheese over top Add cilantro to garnish
Bake uncovered for 20 minutes |
