Apple Dumplings Recipe

2 cups unbleached flour
2 teaspoons baking powder
1 teaspoon salt
¾ cup Crisco
½ cup milk, ice cold

4 to 6 apples, peeled, cored, and cut into eighths

Cinnamon
Nutmeg, freshly grated
Butter

3 cups sugar
¼ teaspoon cinnamon
¼ teaspoon nutmeg
3 cups hot water
⅜ cup melted butter

Preheat oven to 375º
Spray 9" X 13" pan with Pam
Bake 35 to 45 minutes, until brown and bubbling

Pastry:
Combine flour, baking powder, and salt; cut in shortening until mixture resembles coarse meal.
Gradually add milk, stirring to make a soft dough.
Roll dough into a ⅛" thick rectangle on a lightly floured piece of waxed or parchment paper.
Cut into 5" squares.

Place 3 to 4 pieces of apple on each square; sprinkle each with cinnamon, sugar, and nutmeg; dot with butter.
Moisten edges of each dumpling with water; bring corners to center, pinching edges to seal.

Place dumplings 1 inch apart in the prepared pan.

Syrup:
Combine 3 cups sugar, ¼ teaspoon cinnamon, ¼ teaspoon freshly grated nutmeg, 3 cups hot water, and ⅜ cup melted butter; stir to dissolve sugar.

Pour syrup over the dumplings. Bake 35 to 45 minutes or until golden brown. Serve hot, with cream, if desired.

My dumpling prowess has declined steeply through the years. It was Jeff's favorite dessert and may be again if I figure out how to fix the problem, which seems doubtful since I have no idea what it is.

I first baked these apple dumplings in our first apartment, at 1328 W Shepherd, in Denison, TX, for my daddy's birthday. He told me that they reminded him very much of those his mother baked when he was a child, except that his mother served them with heavy cream (not whipped).
