Directions:Mix dry ingredients and set aside. Cream butter and sugar until light & fluffy. Blend in molasses & eggs. Gradually add flour mixture. Mix thoroughly. Can be chilled until firm.
Tip - *the molasses will come out of the cup easier if you oil your measuring cup first. I like black strap molasses, but for a milder flavor lighter molasses will work or, I suppose, cane syrup. If you do not like ginger or molasses, you could try honey and leaving out the ginger. To be continued ....... ask Lorei for the rest. Her computer ate it. |

Notes: From Lorei When the kids were little, we tried to keep them away from sweets. For their birthday we tried new ideas. Hans' first birthday cake was made from banana bread, carrots and the like to make it a train engine. For Tina it was cornbread because she loved Jiffy Mix. One Christmas we tried making gingerbread for the grandparents. It was fun and challenging. Eventually that became our birthday cake as well. It was a challenge to come up with something new, something that had to do with the child's interests, and eatable decorations. We also made it a tradition to have a toy or such hidden inside or as part of the decorations. The fun could be written on page after page. Cowboys, castles, olympic ballet, treasure hunts, and on and on. Once time got pinched and Heidi ended up making her own and did not realize it. Fun, surprise and late nights are the legacy!
