2/12 lbs apples peeled and cored, thinly sliced
2 Tbsp. fresh lemon juice
1/2 tsp. lemon zest
1/2 tsp. nutmeg
1 1/4 tsp. ground cinnamon
1 Cup sugar
3 Tbsp cornstarch with 1/4 cup cold water
9 in. pie crust

Preheat oven to 350º.
Bake piecrust until almost done, according to directions on package. Place apples in a skillet sprinkled with lemon juice.
Bring apples to a boil. Adjust so the mixture bubbles gently. Cook uncovered, stirring occasionally, 10-12 minutes.
Increase heat to high and boil uncovered, stirring often. Cook 5 more minutes until liquid is reduced by 1/2. Reduce heat to low. When apples stop bubbling, stir in cornstarch mixture. (should turn clear and thick, about 2 minutes.)

Make topping. Crumble over apples after poured into pie shell. Bake 30-40 minutes, and cool several hours before slicing.

Top with whipped cream.
