5 lbs ground beef
5 tsp. Mortons Tender Quick Cure For Meats
2 ½ tsp mustard seed
2 ½ tsp hickory smoke salt
2 tsp garlic salt
3 tsp coarse black pepper
1 heaping tsp peppercorns

Directions:
Directions:
Mix well. Keep in refrigerator covered well. For the next 3 days, knead well (1 a day). 4th day let set. On the 5th day, knead and form into 4 rolls. Place on broiler try. Bake in oven 7 hours at 170 degrees. The salami makes its own casing.
