2 1/2 lb. Idaho Potatoes
1 Medium Yellow Onion, finely chopped
1/2 C. Olive Oil
1/2 C. White Wine Vinegar
2 tsp. Salt
1 1/2 tsp. Sugar
1/4 tsp freshly ground White or Black Pepper
1 1/2 tsp. Dry Mustard
1/4 C. Flat - Leaf Parsley

Directions:
Directions:
Cook potatoes in boiling water 20 minutes or until tender.
When cool enough to handle but still warm cut into 1 inch
cubes.

For dressing mix remaining ingredients in a large bowl, add
potatoes (they should still be warm to absorb the dressing)
add parsley, gently fold ingredients together.

Serve at room temperature.

Uncle Gary made this at the Outer Banks and it was so good. He wrote the recipe down for me on a random piece of paper from P & H Mangan Travel about Munich Oktoberfest and it is dated September 1995. Pretty Cool!
