Any kind of fruit can be used.
1 cup sugar
1 stick margarine
1 tsp baking powder
1 ½ cup flour
2 eggs
5 Thinly sliced plums
Vanilla sugar to be sprinkled on top after baking

Directions:
Directions:
You’ll need a 9” round pan. Line with parchment paper to line both bottom and sides of the pan. Pleat neatly along the sides. Preheat oven to 350º degrees. Combine dry ingredients. Slice the plums evenly. Mix eggs and sugar until well blended. Add in the margarine while still cool to the egg mixture. Add dry ingredients until dough is formed. Press dough into bottom of the pan. Place plum slices neatly around the pan. Bake on 350º for 50-60 minutes. Tip: if the cake shrinks away from the sides it’s ready. Sprinkle vanilla sugar while warm.
Alternatively; you can bake the crust slightly and then add fruit, to avoid over baking the fruit.

Bubby’s tip! Double the recipe and freeze the second pie. Defrost for half hour before re-baking.
