Crazy Jane's salt
1 stalk of celery leaves
1 onion - chopped in 4 pieces

Gravy:
Remove large chunks of turkey from roaster. On medium to high heat, bring liquid to a boil. Stir to scrape bits, etc from the bottom and sides of pan. Gradually add flour and essence mixture. Test gravy to determine how much essence is needed - you don't want to dilute the taste. Most times the gravy will take it all. Add salt and pepper, Crazy Jane's salt and let boil slightly. Taste and season accordingly.

Essence:
Place neck, etc. in large pan of water along with celery leaves and onion. Bring to a boil, reduce and simmer 3-4 hours. Let cool. Measure 1 T flour to 1 cup essence for use in gravy. Add flour and stir well. Make sure there are no lumps.
