* one 15 oz package Pillsbury pie crust
* 2/3 cup brown sugar packed
* 1 1/2 Tbsp all purpose flour
* 1 1/2 Tbsp cornstarch
* 1 tsp cinnamon
* 6 cups ripe peaches , peeled and coarsely chopped
* 2/3 cup peach schnapps
* 2 eggs, lightly beaten
* 1 tsp vanilla extract
* 1/4 tsp almond extract
* 3 Tbsp butter
* 1 egg ,
* 1 Tbsp milk
* 1/3 cup course sugar

Line the bottom and sides of a 9" or 9 1/2" glass pie plate with one of the crusts. Mix together the brown sugar, flour ,cornstarch and cinnamon in a bowl. Add the peaches and toss them to coat. Whisk together the schnapps , 2 eggs , vanilla and almond extracts in a bowl. Add this mixture to the peaches and mix gently. Spoon the peach mixture into the prepared pie plate. Dot the top of the peaches with pieces of the butter. Moisten the edges of the pie crust with water, top with the remaining pie crust. Seal the edges and flute. Mix an egg with Tbsp of milk in a bowl. Brush the top of the pie crust with the mixture and sprinkle with the course sugar. Cut a few slits in the top crust for venting. Seal the outside crust edges with aluminum foil to prevent burning. Bake in a pre heated 375*f oven for 45 minutes or until browned. Recipe makes 6 to 8 servings.
