4 cups shredded apples (I run it through the food processor/grater attachment)
2 cups sugar
Fruit Fresh (found on the canning aisle)
2 teaspoons cinnamon
2 eggs
1 cup vegetable oil
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons vanilla
2 cups flour
1 cup chopped nuts

Directions:
Directions:
Preheat oven to 350
Grease and flour or sugar one angel food cake pan or bundt cake pan
Bake 1 hour

Shred the apple in the food processor; put in a bowl with sugar; sprinkle with Fruit Fresh; set aside.

Beat together eggs, oil, cinnamon, soda, and vanilla.

Add flour; mix until smooth

Mix in apples and nuts.

Bake 1 hour or until toothpick/cake-tester comes out clean.

Cool 15 minutes in the pan, then transfer to wire rack.

There were several copies of this recipe written in my mother's dramatic script among her cookbooks and recipe boxes. I don't remember who gave it to her, but it was an ever-present Fall desert in our house.
