Ingredients:  
1 Large Sweet Onions
1/2 lb mushrooms sliced
5 T. Butter
1 C. Pearl Barley
2 Cups Chicken Stock

Directions:
Directions:
Saute onions until wilted and mushrooms until they are soft (about 4 minutes)
add barley, stirring barley until golden brown, may need to add more stock to
barley if it is not tender. When the barley is done there is no liquid left.

Put into greased casserole dish add 1 C. chicken stock. Cover casserole and
Bake @ 350º for 30 minutes. Then uncover add rest of stock bake until liquid
is absorbed and barley is tender...not mushy about 20 to 30 minutes more.
