Ingredients: Cherries Jubilee is the best known of the flaming fruit desserts. Despite its flash and glamour, its really just a hot cherry sundae. but, at the last minute, some high proof booze is poured over the simmering cherry sauce. The rising vapors is ignited with a match and burns away in a blaze of glory. If your timing is right, you can even manage to spoon the sauce still flaming, onto the dessert. A feast for the eye!
16oz can unsweetened pitted red cherries, un-drained 1 T cornstarch 1/3 c brandy (vodka may be substituted) Ice Cream

Directions:Heat and stir cherries and cornstarch together in a sauce pan or chafing dish until liquid thickens and clears. TO SERVE: 1. Have cherry sauce simmering in chafing dish. 2. Add liquor, then ignite the vapors by holding a burning long match or straw over the simmering sauce. 3.Spoon, while flaming, over Ice Cream using a long handled ladle. PREPARATION: 1. Scoop Ice Cream into serving dishes ahead of time and store in freezer until ready to serve. 2. Have ready: 2 fireplace matches, long handled ladle 3. Avoid long floppy sleeves and trailing scarves while preparing flaming dishes. 4. Have dinner guests sitting down at the table before you begin. 5. Serve at night using very low lighting or candles on the table as flames are very low, blue and hard to see. 6. Place bottle of liquor on the table - ready - cap off 7. Heat and serve as directed. (I was not able to spoon the flames but ignited them ok. Does not burn long but worth the time and effort spent for this spectacular cooking experience. |

Notes: FABULOUS and your audience will thank you. Alternative can be Bananas Jubilee with 4 ripe sweet bananas sliced into service dishes. Top with flaming cherry sauce and serve immediately.
