1 c. Yellow cornmeal ¾ c. self rising flour 1 tsp. kosher salt ½ tsp. cayenne pepper ½ tsp. smoked paprika ½ small onion, grated ¼ c. chives, chopped ½ lb. cooked shrimp, chopped 1 c. buttermilk 1 egg, beaten ¼ c. cheddar cheese, grated peanut oil for frying
Preheat oil in fryer to 350º. Mix all ingredients in bowl. Drop heaping tbsp. sized amounts into hot oil. Fry 2-3 minutes. Remove to paper towel to drain. Serve with Onion dip.
