Enchiladas Recipe

2 pounds ground beef
1 medium onion - diced
1 can black beans - rinsed and drained
1 small can whole kernel corn - drained
2 cans enchilada sauce
12 flour tortillas
2 cups shredded cheese

Directions:
Directions:
Fry ground beef and onion until beef is cooked through
Add beans and corn and heat until warmed, mix in 1 can of enchilada sauce
Put 1/4 can of enchilada sauce into bottom of 9 X 13 pan
Fill each tortilla with meat mixture and wrap securely and lay side by side in prepared pan
When done spread the remaining enchilada sauce over the whole batch and top with cheese.
I like to use cheddar or co-jack cheese.
Bake at 350 for 1/2 hour.

My very first time I had enchiladas was about 8 years ago. Eric and Stacy invited me over to eat and Eric had made enchiladas. They were soooo good. I still can't make them as good as him!
