1 whole chicken
1 can Ro-Tel tomatoes
1 small pkg. Velveeta, cubed
1 T margarine
1 onion, chopped
1 bell pepper, chopped
1 can sliced mushrooms, drained
2 cans cream of mushroom soup
2 T chili powder
1 pkg. plain Doritos reserved chicken broth
1 cup grated Cheddar cheese
1 cup grated Monterey Jack cheese

Boil chicken in salted water until done. Cool, debone and cut into bite size pieces. Reserve broth. In a medium skillet, cook onion and bell pepper in a small amount of margarine just until soft. Add Ro­ Tel, Velveeta, mushrooms, soup and chili powder. Stir until cheese melts. Starting with Doritos, that have been dipped in broth, alternately layer chips and chicken mixture in a large casserole dish until all used. Top with grated cheeses and bake at 350 degrees for 20 to 30 minutes. Serves 8 to 10.
