2 cups sugar
3 cups flour
1 teaspoon baking soda
teaspoon salt
1 teaspoon cinnamon
2 cups grated carrots
1-1/3 cups vegetable oil
2 eggs, beaten
1 cup crushed pineapple, drained
1 teaspoon vanilla extract
1 teaspoon lemon extract
teaspoon almond extract

Directions:
Directions:
Combine dry ingredients in large mixing bowl. Add carrots, vegetable oil, and eggs. Beat until well blended. Add other ingredients and mix well. Place batter in two large 9 cake pans or one 9X13 pan which has been greased and floured. Bake @ 350 degrees for approximately 1 hr. Cool.

Cream Cheese Frosting:

1 8 oz. pkg. cream cheese
stick of butter
1 box powdered sugar
1 teaspoon vanilla extract

Combine all ingredients until well blended.
